Je descends de mon bus à Belo Horizonte, également surnommée Beagá (BH en portugais) avec du retard sur mon planning. Rio m'a en effet retenu un peu plus que prévu, et je crains que BH ne fasse de même : la troisième ville du Brésil est réputée pour sa gastronomie et sa cachaça, et j'aime autant la première que la seconde.
Je passe rapidement sur l'anecdote qui veut que la ville ait une maxime "A gente não tem mar, então vamas pra bar!" faisant rimer l'absence de mer avec le nombre de bars pour vous raconter qu'à peine arrivé chez mon premier hôte, on m'offre ma première cachaça. Il est 17h30, il fait 28°C et je viens de faire 7h de bus... Le programme et les verres s'annoncent bien remplis.
Je me lance donc dans une quête un peu vaine : appréhender la gastronomie brésilienne en 10 jours. Entre la gastronomie typique du Minais Gerais, l'Etat où je me trouve, et la richesse des saveurs de ce pays où se mélangent les influences culinaires africaines venant du nordeste et de l'état de Bahia, les fruits et les légumes de toutes les régions du pays, et les réminiscences de la gastronomie européenne datant de la colonisation, la tâche s'annonce gargantuesque. Ajoutons à cela la multitude de différentes cachaças produites artisanalement et vous comprendrez vite que même notre illustre géant aurait fait une crise de foie.
J'affine donc ma technique d'approche à grand coup de caïpirinhas et de dégustations avant de porter mon attention sur une institution gastronomique : "os tropeiros", pensant simplifier la tâche. Quelle erreur ! Si l'unanimité culinaire se fait derrière ce plat populaire, assiette du jour au moins une fois par semaine dans une majorité de restaurants, la discorde politique règne quand on aborde ce sujet à quelques mois de la Coupe du Monde de Football 2014.
En effet, entre le gouvernement, la FIFA et les vendeurs de tropeiros expulsés des abords du stade Mineirão qui accueillera la Copa en juin prochain, le torchon brûle depuis longtemps. En effet, malgré sa popularité, cette fierté culinaire et ceux et celles qui la cuisinent et la vendent ne sont plus les bienvenus aux abords du stade où la FIFA a installé ses partenaires, avec l'appui de la préfecture de Belo Horizonte et au mépris de toute considération pour les droits des vendeurs.
Ceux-ci payaient en effet leurs places aux abords du stade, voire à l'intérieur lors de foires occasionnelles, et ils se voient désormais privés de tout accès à leur lieu de vente historique...et ce depuis 2010.
Défendus par le COPAC (Comitê dos Atinguidos pela Copa / Comité des personnes atteintes par la Coupe du Monde) qui se bat contre les injustices flagrantes de l'organisation de la Copa, les vendeurs de tropeiros luttent pour exister durant cet événement gigantesque, où les particularités locales plient devant la mondialisation des marchés, et pour tenter de s'assurer un avenir aux abords de ce stade dont les droits d'exploitations ont été cédés à une entreprise privée pour les 30 années suivant la Copa. Entreprise que rien n'oblige à accorder un quelconque accès aux vendeurs de tropeiros.
I hopped off the bus with some delay in Belo Horizonte, also nicknamed Beagá in Portuguese. Indeed, Rio held me a bit longer than I had planned, and I'm afraid BH will do the same: the third city in Brazil is well-known for its gastronomy and its cachaça, and I like the former as much as the latter.
I won't dwell too long on the anecdote which gave the city a motto: "A gente não tem mar, então vamas pra bar!" which links the absence of the sea with the number of bars. As soon as I arrived at my first host's place, I was given my first cachaça. It was 5:30 pm, 28°C and I had just spent 7 hours on the bus… The program as well as the glasses are going to be filled up.
I then embark on a rather vain quest: I want to get an overview of the Brazilian gastronomy in ten days. Between the typical gastronomy of Minais Gerais, the state in which I find myself and the variety of flavours of this country where African food influences from the Nordeste are mixed with these of the State of Bahia, the fruit and veg of all the regions of the country, the remains of European gastronomy dating back to the colonisation – my task seems unachievable. Let's add to this the multitude of various homemade cachaças, and you'll understand that even our illustrious giant would have had an upset stomach!
I thus refine my technique by drinking a lot of caïpirinhas and tasting food before I set my attention on a culinary institution: "os tropeiros", thinking I'd make the task easier. What a mistake! Even though everybody seems to enjoy this popular dish – they serve it as menu of the day at least once a week in most of the restaurants – the political discord rules whenever you tackle the issue, a few months before the World Cup 2014.
Indeed, between the government, the FIFA and the tropeiros sellers who were rejected from around the Mineirão stadium which hosts the Copa next June, the war has started a long time ago. Despite its popularity, the culinary pride and those who sell it are not welcome any longer around the stadium where the FIFA has set up its partners with the support of the prefecture of Belo Horizonte and regardless of any kind of consideration towards the rights of the vendors. As a matter of fact, the latter paid their space around the stadium, even sometimes inside it during occasional fairs, and they are now deprived of any access to their historical market place… since 2010.
They are defended by the COPAC (Comitê dos Atinguidos pela Copa / Committee of People Suffering from the Wold Cup) which fights injustices of the organisation of the Copa. The vendors strive to survive during this gigantic event, where local particularities are swallowed up by the globalisation of markets, and they try and provide for a future around this stadium which rights of use have been given to a private company for 30 years after the Copa. And of course nobody forces this company to grant any kind of access to the vendors of tropeiros.
